Tasting Notes
Colour : Deep gold.
Nose : Rich, well-developed. The fruity (pear, banana, pineapple), honeyed (acacia), syrupy (cane sugar) and vanilla first nose is very complete. Allowed to breathe, the aroma palette becomes increasingly exotic (passion fruit, yellow kiwi) and vegetal (tobacco leaf, lucerne). Gradually, strong spices (pepper, clove, nutmeg), candied citrus fruits (lemon, grapefruit) and heady fragrances (iris, geranium, hyacinth) flood the air.
Palate : Distinguished, well-balanced. With time, the rich (vanilla flan) and fruity (ripe banana, Mirabelle plum) attack becomes liquoricey, rooty (ginger, gentian) and herbaceous (verbena, camomile). The deliciously syrupy mid-palate (roasted pineapple) is also vanilla and roasted (coffee). Staying close to cane sugar, the end of the palate originally reveals remarkable notes of absinthe.
Finish : Long, heady. Closely linked to the palate, the start of the finish wavers between the fibrous bitterness of sugar cane and very noble notes of bourbon vanilla and tobacco. The end of the finish reveals a large number of dried fruit and nuts (apricot, hazelnut, chestnut). The beautifully fruity retro-nasal olfaction (kaffir lime, yellow plum, pear) covers the taste buds in vanilla pod, while the empty glass is particularly spicy (cinnamon, ginger) and herbaceous (rhizome).
