Since 1988, Signatory Vintage has built its reputation on carefully sourced whisky and an unusually transparent approach to independent bottling. Named after the rock formation north of Saligo Bay, Sleeping Giant connects this Itinéraires bottling to Kilchoman’s home on Islay’s western coast. Produced from malt peated to 50 ppm and matured in sherry cask, the whisky places Kilchoman’s medicinal, maritime distillate alongside dried fruit, citrus, toffee and chocolate. At 54.1% ABV, the sherry influence gives weight and sweetness without masking the smoke, iodine and underlying malt.
