Tasmania’s warmer, more variable conditions accelerate ageing well beyond Scotland’s, so no two casks mature the same way, even side by side in the same warehouse.
That’s why Sullivan’s Cove skips the age statement, each cask is bottled when it’s ready, judged by taste rather than a fixed number of years. Every release in the American Oak series is 100% unblended, drawn from a single 200 litre ex-Bourbon barrel, so each one carries the character of its own cask. FETTERCAIRN 17 YO 2007 Refill American Hogshead Connoisseurs Choice Gordon & Macphail
Fettercairn is famous in the Scotch world for its unique copper cooling ring encircling the top of its spirit still, pouring cold water down the exterior during distillation to create a distinctive style of internal reflux. The distillery draws its pure mountain spring water directly from the surrounding Cairngorm mountain range, a source that has shaped its character for generations.
For this 17 year old release, Gordon & MacPhail selected a refill American hogshead rather than a first-fill cask, a deliberate choice that lets Fettercairn’s naturally bright, tropical spirit lead rather than being shaped by heavy oak influence.Â

CHRISTIAN DROUIN 16 YO Clarendon Angels
Christian Drouin is one of Normandy’s most respected Calvados houses, and its ExpĂ©rimental range pushes the category further by finishing aged Calvados in casks sourced from leading spirits producers worldwide. This release takes its name from the source barrels, Jamaica’s Clarendon Distillery, following the same naming style used across the range for its rum, tequila and other cross border finishes.
This 16 year old Calvados Pays d’Auge is finished in casks that once held Jamaican pot still rum, layering funk, banana and spice over the orchard fruit of mature Normandy Calvados. Bottled at 47.5% ABV without added colouring, it’s a bold, high-strength expression balancing praline, pepper and baked tropical fruit.

KILCHOMAN 100% Islay 11 YO Oloroso Sherry Cask Matured
Kilchoman is Islay’s farm distillery, carrying out every step of production on site, from growing a portion of its own barley through to distillation and bottling. The 100% Islay range represents this philosophy in its purest form, using barley grown, malted, distilled, matured and bottled entirely on the island.
Matured in Oloroso sherry casks, it also carries the range’s signature gentler peat level of 20 PPM, lighter than Kilchoman’s standard bottlings. Unlike Kilchoman’s core range Machir Bay & Sanaig, which uses malted barley peated to 50 PPM, this release uses the distillery’s own farm grown barley at a lighter smoke level, offering a more delicate expression of Islay peat.
