LAPHROAIG 25 YO 2000 #4078 Symington's Choice

Symington’s Choice sits at the very top of Signatory Vintage’s tiers, above their 100 Proof series and standard cask-strength releases. Founder Andrew Symington personally selects each cask for the range, looking for perfect harmony between oak and spirit, casks that have spent long years maturing in top-grade first-fill wood, elevating raw distillery character into something closer to a luxury-tier dram.

Distilled in 2000 and matured for 25 years exclusively in a single first-fill Oloroso sherry butt, this expression channels Laphroaig’s famously intense, medicinal smoke through decades of rich sherry influence, a combination that only reveals itself with this kind of time and cask quality.

WHY YOU’LL WANT TO TAKE THIS HOME

  • This bottle is a founder’s personal pick, hand-selected by Andrew Symington for its exceptional oak-to-spirit harmony rather than released as a standard bottling
  • From cask #4078, limited to just 521 bottles worldwide, a rare opportunity to own a long-aged Laphroaig at this level of exclusivity
  • Preserving a full 54.5% natural cask strength, it retains the oily, heavy texture and intense medicinal ester punch that dilution strips away

BEST FOR

Collectors chasing exclusivity and Laphroaig fans eager to get their hands on Andrew Symington’s top-tier cask selections, along with enthusiasts curious how extended first-fill sherry maturation transforms Islay’s most intense smoke.

SULLIVANS COVE French Oak

Sullivans Cove is one of Tasmania’s most celebrated distilleries, built on small-batch, single cask releases that showcase Australia’s unique maturation climate. Tasmania’s warmer, more unpredictable climate speeds up maturation well beyond what’s typical in Scotland, so no two casks in the same warehouse ever age quite alike.

French Oak sits alongside American Oak as a core release in the range, and the series has proven itself on the world stage, taking home World’s Best Single Cask Single Malt at the 2026 World Whiskies Awards. As a second-fill cask, the heavy wood and dark Tawny sweetness are softened, letting Sullivans Cove’s own character lead.

WHY YOU’LL WANT TO TAKE THIS HOME

  • Experience this second-fill approach, where heavy wood structure and dark Tawny sweetness are balanced rather than overpowering
  • From a 300 litre French oak cask that once held Australian Tawny, limited to 531 bottles worldwide, this offers a chance to explore a profile close to the award-winning Cask No. TD0374

BEST FOR

Whisky enthusiasts and drinkers curious about fortified wine cask influence, and collectors interested in single cask releases with a distinctly Australian cask heritage.

EDRADOUR 2015 PX Cask 200th Anniversary

Edradour is one of Scotland’s smallest and most traditional distilleries, and this bottling was created specifically to mark 200 years since its founding.

Where the core Edradour 10 Year Old draws its character from Oloroso sherry casks, layering walnut, honey and stone fruit with floral, peppery notes, this 200th Anniversary release takes a different path entirely. Distilled in 2015, it underwent a full 10 years of maturation exclusively inside first-fill Pedro Ximénez sherry butts, rather than the quick 6-to-12-month sherry finish common on many whiskies today. This results in a deeper, more concentrated sweetness that only full-term PX maturation can bring.

WHY YOU’LL WANT TO TAKE THIS HOME

  • If you already enjoy the Edradour 10 Year Old, this shows how a full decade in first-fill PX casks pushes the house style into deeper, more intense sherry territory
  • Non-chill filtered and naturally coloured, this is PX sherry influence in its purest, most concentrated form

BEST FOR

Drinkers seeking a deeper, more concentrated sherry profile, and whisky collectors looking for a bottle that marks 200 years of Edradour’s history.

NIKKA The Grain

Nikka’s Discovery Series has spent years spotlighting some of the brand’s rarest and most experimental liquid, and The Grain is both the series’ closing chapter and a limited edition

This is a multi-distillery grain whisky blend, drawing together heritage stocks from across Nikka’s history. At its core are Coffey Still grain whiskies from Miyagikyo and Moji, made from corn. Layered into this are rarer, more experimental stocks from Satsuma and Nishinomiya, including Coffey-malted barley, grain spirits and aged reserves. Bottled at 48% ABV, expect beeswax and fresh fruit on the nose, a creamy vanilla palate, and a smooth finish of cinnamon, ginger and honey.

WHY YOU’LL WANT TO TAKE THIS HOME

  • If you’re used to malt-led Japanese whisky, this offers a rare deep dive into grain whisky and the different distilleries and techniques behind it
  • A chance to own liquid drawn from historic and experimental stocks from the NIKKA distilleries

BEST FOR

Curious drinkers wanting to taste something away from the usual grain and standard whiskies, and Nikka collectors completing the Discovery Series.

FOURSQUARE Indomitas

Indomitas is the eleventh release in the world-renowned co-bottling partnership between Luca Gargano of Velier and Richard Seale, Master Distiller at Foursquare Distillery in Barbados, a collaboration that has captivated rum collectors since it began in 2016.

This is a signature Foursquare Single Blended Rum, bringing together copper pot still and Coffey column still spirit, both distilled in 2010 at the same distillery. The two are matured separately before they meet, fully tropically aged and bottled at barrel proof 62% ABV.

WHY YOU’LL WANT TO TAKE THIS HOME

  • This is a limited release, one of rum’s most celebrated ongoing collaborations, a partnership rum collectors have followed since 2016
  • The pot still rum spends 15 years alone in ex-Bourbon casks, 6 years in ex-Bourbon followed by 9 years in ex-Cognac, letting you taste both cask influences side by side in one cuvĂ©e

BEST FOR

Rum enthusiasts and Velier collectors following the ongoing Foursquare collaboration series, and drinkers curious about multi-still, multi-cask blending.
