KI ONE Red Pepper Cask

For drinkers new to Korean whisky, it offers an introduction to Ki One through one of the distillery’s most unconventional releases. Available exclusively online through Whisky.SG in Singapore.

BLAIR ATHOL 18 YO 2006 Elixir Distillers
Elixir Distillers is one of whisky’s most influential independent bottlers, shaped by co-founder Sukhinder Singh’s decades of experience as a collector and spirits specialist. The Single Malts of Scotland is its flagship independent bottling brand, reserved for casks selected to reveal the individual character of Scotland’s distilleries.
This 18-year-old turns the spotlight on Blair Athol, a Highland distillery whose rich, fruity malt is best known as a principal component of Bell’s blended Scotch. Matured in a Pedro Ximénez sherry hogshead, the whisky brings dark fruit, chocolate and spice to Blair Athold’s naturally generous style.
WHY YOU’LL WANT TO TAKE THIS HOME
- Discover what Elixir saw in this cask: PX richness that builds on Blair Athold’s weighty character rather than burying it
- Experience an 18 year old from a distillery most drinkers know only indirectly through blends
- Explore a benchmark independent bottler through an accessible entry into The Single Malts of Scotland and its distillery-led approach
BEST FOR
Drinkers ready to move beyond familiar distillery releases, sherry-cask enthusiasts seeking spirit as well as cask character, and anyone interested in comparing independent bottlings side-by-side.
WILLETT 8 YO 2016 Bourbon Single Barrel Itinéraires
Published annually, La Maison du Whisky’s Creations catalogue is the result of months of research, tasting and collaborations with producers around the world. Each edition presents LMDW’s view of the spirits worth discovering throughout the year through limited releases, single casks, small batches and special collaborations.Â
The 2025 edition, Itinéraires, explores the relationship between spirits and the places that shape them. Among its journeys through world whisky is this eight-year-old single-barrel bourbon from Willett in Bardstown, Kentucky.
Made with 72% corn, 13% rye and 15% malted barley, Barrel #8633 places bourbon’s defining grain firmly at the centre. Bottled at 57% ABV, it offers one individual expression of Willett rather than the combined profile of several barrels.
WHY YOU’LL WANT TO TAKE THIS HOME
- Discover one of LMDW’s Itinéraires bottles and explore Willett through LMDW’s tasting lens with an expression distinguished by its rich and persistent corn character
- Experience the individuality of a single barrel and enjoy one of only 194 bottles drawn from Barrel #8633
BEST FOR
Connoisseurs of LMDW catalogue bottlings, bourbon drinkers exploring single barrels and anyone interested in how curatorial selection can reveal a different perspective on a distillery

DAILUAINE 16 YO 2008 1st Fill Oloroso Sherry Butt Finish
Since 1988, Signatory Vintage has built its reputation on carefully sourced whisky and an unusually transparent approach to independent bottling. Its labels disclose the distillery, distillation and bottling dates, cask type, cask number and total outturn—allowing drinkers to know precisely what is in the bottle.
Part of Signatory’s Cask Strength Collection, this Dailuaine was distilled in 2008 and matured for 16 years, including a finish in first-fill Oloroso sherry butt #6. Dailuaine’s naturally weighty, oily spirit provides the structure for the cask’s dried fruit, nuttiness and spice, while bottling at 57% ABV preserves the intensity of both.
WHY YOU’LL WANT TO TAKE THIS HOME
- Complete transparency, with every significant production and maturation detail stated on the bottle.
- Bottled at natural cask strength, without chill filtration or added colouring.
- Discover an overlooked Speyside distillery through one fully documented cask, with only 681 bottles were drawn from cask #6.
BEST FOR
Drinkers ready to explore cask-strength whisky through Signatory Vintage’s fully transparent, natural-presentation approach, and anyone curious to see how a first-fill Oloroso finish shapes Dailuaine
KILCHOMAN 10 YO 2015 Sleeping Giant Itinéraires
Named after the rock formation north of Saligo Bay, Sleeping Giant connects this Itinéraires bottling to Kilchoman’s home on Islay’s western coast. The distillery opened in 2005 and remains independently family-owned, making this 2015 vintage a useful look at its heavily peated make after a full decade in wood.
Produced from malt peated to 50 ppm and matured in sherry cask, the whisky places Kilchoman’s medicinal, maritime distillate alongside dried fruit, citrus, toffee and chocolate. At 54.1% ABV, the sherry influence gives weight and sweetness without masking the smoke, iodine and underlying malt.
WHY YOU’LL WANT TO TAKE THIS HOME
- Explore Kilchoman beyond its younger core expressions, where ten years of maturation brings greater integration between peat, distillate and oak.
- Taste a well-judged meeting of peat and sherry, where neither side is reduced to a supporting role.
BEST FOR
Kilchoman drinkers interested in how its distillate develops with age, peat-and-sherry enthusiasts looking for equilibrium rather than cask dominance, and collectors following LMDW’s annual single-cask releases
