Located on the shores of Islay, Caol Ila is known for its distinctive combination of smoky peat, maritime character and a surprisingly light spirit. Distilled in 2011 and matured for 12 years in an ex-Sherry Butt, this single cask from Elixir Distillers’ The Single Malts of Scotland range showcases a particularly maritime and smoky side of Caol Ila. The sherry cask complements the distillery’s characteristic peat with layers of candied orange, caramel and smoked fruit, while grilled and barbecued notes add a savoury edge. Bottled without chill filtration or added colouring, it retains the natural character of the cask and spirit.
