North of Port-au-Prince, near Saint-Michel de l’Attalaye, Michel Sajous built a distillery on the very spot where the old family establishment stood. On 30 ha, he cultivates several varieties of sugar cane organically, including the “crystalline” one. Once the cane sugar is extracted, it produces its wonderfully fruity and creamy clairin from a cane syrup concentrated with the vapor produced by the bagasse.
