Founded in 1994, the Sullivans Cove distillery is located in Cambridge, not far from Tasmania’s capital, Hobart. Equipped with two stills, it produces a single malt from 100% local barley. After being transferred to a new and more spacious premises in 2014, it was bought in 2016 by a company directed by Adam Sable, former manager of the Scottish Lowlands distillery Bladnoch. In very high demand, certain versions aged notably in French oak have played an important role in building the distillery’s reputation amongst enthusiasts across the world. This truly outstanding 11-year-old version was clearly destined to join the Maison du Whisky’s first Artist World Series range.
Topaz with copper hues
Rich, concentrated. Aromas of Napoleon cherry, quince jelly and marmalade bring lots of originality to a first nose that is also roasted (burnt wood), toasted (grilled bread) and spicy (pink peppercorn). Allowed to breathe, it becomes increasingly exotic (mango, guava) and floral (rose petal, French marigold, lavender). Gradually, candied ginger, dark chocolate, lime blossom honey and orange zest punctuate a very mature (fig, date) palette of aromas.
Dense, fleshy. Beginning exactly where the aromatic palette left off, the attack takes on the same notes of date and fig, adding salted butter caramel and very ripe mango. With incredible balsamic freshness (cedar, Oregon pine), the mid-palate is medicinal (ointment) and iodine (tincture). Complex and mineral (slate), the end of the palate wavers between wood fruits (cranberry, strawberry, blueberry) and heady florals (violet).
Long, silky. Like the smooth yet grainy texture of wild peach skin, the start of the finish is then floral (lilac, tuberose, hyacinth). Deliciously chocolate, with time it moves into notes of apricot and praline. Next, cardamom seed and Turkish delight add an oriental feel to the very nobly expressed palette of flavours. Characterized by tobacco, saffron and black liquorice, the retro-nasal olfaction is a true oasis of fresh- ness. A bouquet garni of dried flowers, the empty glass is also spicy, chocolate and empyreumatic (wood varnish).
