Created in 2008, the Japanese single malt whisky Chichibu is already well known to Japanese whisky enthusiasts, as well as whisky connoisseurs in general. Produced 100% in its distillery, and soon for certain vintages from local barley and peat, and even Japanese oak, Chichibu is on its way to becoming the first 100% Japanese whisky, thanks to the efforts of its creator, Ichiro Akuto. Fermented in mizunara (a highly sought-after variety of Japanese oak for whisky) casks and distilled in small stills, the liquid collected is surprising for its maturity and complexity, even at a very young age. A true artisanal whisky.

From the first second when the tasting of this version begins, it is known that between Chichibu and Madeira wine, it will be a love affair. We can even talk about mad love as these two protagonists show generosity and passionately dedicate themselves to their union, both inspired and joyful where the superfluous is forever banned. Each perfume, each flavor strikes the heart of those who experience them. From then on, the deepest silence, words explode with the force of an unleashed torrent.

Tasting Notes


Nose
: Fine, distinguished. Dried fruits (date, fig) perfuming red fruits (raspberry, strawberry) or a raisin cake. That is what the first nose influenced by Madeira wine expresses without being swallowed by it. Then, flowers (peony, pink pepper) fill the atmosphere with their heady perfumes while an ocean breeze refreshes it. Absolutely magnificent! Bitter orange zest arrives in abundance at the instant.

Palate : Both ample and concentrated. Ample because it fills the palate in its entirety and delicately leaves notes of licorice, pencil lead, oranges, heather honey, and geranium. Concentrated because its center is occupied by malted barley, precious wood, bee wax, and violets. It then becomes exotic (mango, persimmon, guava).

Finish : Long, smooth. With gourmet pleasure, it has become chocolatey. Spices of rare nobility (cardamom, saffron) gradually cover fresh figs and white peaches. Very rooty, it reveals gentian and ginger over time. The aftertaste makes us smell the smoke of a Havana full of elegance and personality. The empty glass oscillates between Madeira wine and malted barley.
