Tasting Notes

Nose : Fine, complex. Extremely delicate with notes of nougat and coconut, it quickly becomes floral (honeysuckle, iris). With airing, it shows a lot of tension and minerality. Mirabelle and lemon dominate the aromatic palette. Much later, new nuts (walnuts, almonds) accompany strong spices (black pepper, star anise).

Palate : Full of maturity and freshness. It starts by setting up a thick foam carpet on the edge of the palate. The mid-palate is particularly fruity (peachy apricot, mango, strawberry, persimmon). With unparalleled delicacy, it becomes more and more pastry (fruit cake) and cand (prune, fig).

Finish : Long, nuanced. It never stops extending the mouth without losing intensity and power. Citrus fruits (oranges, clementines, kumquat) are abundant. Their slightly acidic juice is a pure delight. Over time, a fine layer of toffee covers them. The aftertaste is licorice-y and tenderly spicy (cinnamon). The empty glass has lost nothing of the first nose, and reveals, in addition to the cand fruits, a very light trace of smoke.
