The majority of their whiskies reach their peak at around 10-12 years, but from time to time, their distillers identify a cask with specific characteristics that allow for extended maturation. The result is the oldest and rarest Australian whiskies ever released. Old & Rare American Oak is matured for a minimum of sixteen years in American oak barrels previously used for aging bourbon. This single cask whisky offers incredible complexity and length on the palate; it is rich, woody, and extremely textured while retaining the unique brilliance and character of Sullivans Cove’s spirit. Each bottle is presented in a unique, handmade solid wood box and includes a hand-signed letter of authenticity by the master distiller, Heather Tillott. American Oak ‘Old & Rare’ Single Cask HH0310 was filled on May 19, 2000, and decanted on December 4, 2018, for a maturation of 18 years and 7 months. After such a long maturation, this 200-liter ex-bourbon American oak cask yielded only a minuscule number of bottles at 48% alcohol.
