Tasting Notes
Colour : Orange copper.
Nose : Rich, pulpy. Initially, sugar and cane honey literally emerge from the glass. Then, it fully expresses rootier aromas (gentian), more chocolatey notes, and more leguminous scents (carrot, turnip). Overall, it possesses undeniable charm.
Palate : Delicate, creamy. Medicinal (balm), spicy (curry, turmeric), and infused (bay leaf, chervil), the flavor profile also displays originality. In some respects, it evokes the Scottish single malt Ben Nevis with much verve. Gradually, candied ginger and cocoa powder spread throughout the palate.
Finish : Long, serene. Very close to sugar cane, the tasting becomes increasingly tertiary (mushroom, roasted nuts, foam, chestnut). Milky (soy, almond), the retro-nasal olfaction is also jam-like (quince jelly, apricot), while the empty glass exhibits spicy (nutmeg) and rooty (gentian) notes.
