Located at the foot of Mount Asama, a volcano that is still active, the Karuizawa distillery was founded in 1955. It ceased production in 2000. Becoming legendary, the single malt it crafted wrote some of the finest chapters in the history of Japanese whisky. Aged in sherry casks until 2018 by the Taiwanese company Hua Yang, which holds the largest stocks of casks of this prestigious whisky, this particularly mineral version proves to be demanding, on par with the greatest. To appreciate all the subtleties and richness of its aromatic and gustatory palette, the taster will need to take their time…

Tasting Notes


Colour
: Mahogany.

Nose : Rich, powerful. Impressive, the first nose reveals notes of blood orange, smoked bacon, dark chocolate, tuberose, wild strawberry, and incense. Quite a list! With aeration, the aromatic palette evolves towards wax scents of rare intensity: varnish, putty, sanded parquet, wood paste.

Palate : Lively, stately. At the palate’s attack, a magnificent licorice reduction opens up to animal flavors (bresaola, bison meat) and empyreumatic notes (tar, pipe tobacco). Then dust grains settle on the surface of a very mineral (charcoal, India ink) and saline gustatory palette.

Finish : Long, concentrated. Right away, lime, crushed almonds, and candied apricots underline the oxidative and rancid nature of the beginning of the finish. In the aftertaste, whole baskets of red and black fruits spread across the entire palate. The retro-olfaction is both infused and milky (milk tea, creamy coffee).
