Appearance : pale gold.
Nose : fresh, unctuous. The first nose is characterized by beautiful milky notes (coconut, almond), green walnut, candied lemon and juicy pear, and is also wonderfully vanilla. Allowed to breathe, aromas of white mint, lily of the valley and iris highlight the heady nature of the aroma palette, which lingers on notes of toffee, grilled malted barley and lucerne.
Palate : lively, stately. Far more extroverted than implied by the nose, the attack is exotic (passion fruit, kiwi, lychee), delicately chocolatey and liquoricey. On the mid-palate, flavours of barley sugar and lavender honey appear alongside frangipane and dried fruit (prune, date, fig). The mentholated and spicy (saffron, clove) end of the palate gradually becomes herbaceous (reed, rush).
Overall : long, invigorating. Green tomato tempura, coriander, chervil and green apple provide a deeply persuasive showcase of the springlike nature of the start of the finish. Superb notes of green tea and jasmine tea then arrive to further reinforce this sensation of freshness. The retro-nasal olfaction places one fruit centre stage: apple. The empty glass is spicy (ginger, cinnamon), milky and malty.
