Tasting Notes
Colour : Gold with green reflections.
Nose : Rich, heady. Initially, there’s a rooty peat (gentian) dominating the forefront, gradually accompanied by floral (iris), fruity (pear), milky (yogurt), and herbaceous (tarragon, lichen) nuances. With aeration, mineral salts and mineral notes of great purity (schist) emerge.
Palate : Generous, creamy. Fruity (apple, white peach), vanilla, and milky (coconut) – the mouthfeel at the start reveals lovely ashy and medicinal (mustard plaster) notes. Flavors of candied lemon, fresh walnut, and acacia honey add vibrant and indulgent notes to the mid-palate.
Finish : Long, smooth. Beginning with a refreshing malty bitterness, the start of the finish gives way to a fermenting aftertaste (malt beer), verdant (green barley), and creamy, gradually overlaid with hints of licorice and dry peat.
