Tasting Notes
Colour : Orange copper.
Nose : Rich, pulpy. At first, sugar and cane honey literally burst from the glass. Then, it fully reveals more root-like aromas (gentian), chocolatey notes, and leguminous hints (carrot, turnip). The whole has an undeniable charm.
Palate : Delicate, creamy. Medicinal (balm), spicy (curry, turmeric), and infused (bay leaf, chervil), the flavor profile demonstrates originality. In some ways, it vividly evokes the Scottish single malt Ben Nevis. Gradually, candied ginger and cocoa powder spread all around the palate.
Finish : Long, serene. Very close to sugar cane, the tasting experience becomes increasingly tertiary (mushroom, roasted nut, moss, chestnut). Milk-like (soy, almond), the retro olfaction is also jammy (quince jelly, apricot), while the empty glass reveals spicy (nutmeg) and root-like (gentian) notes.
