Appearance : straw
Nose : very clean and particularly pleasing, the nose is above all pastry-scented (vanilla flan, coconut) and exotic (banana, confit yuzu). The fruit then mixes with malty, noble wood and salted butter caramel aromas. Also mineral, the iodine on the nose is like a field of barley swept with sea spray. Allowed to breathe, we find notes of liquorice that reflect the long maturation.
Palate : the whisky has a beautiful oily and rich texture. The alcohol is perfectly integrated, allowing full expression of the aromas of spices (vanilla, cinnamon) and fruit. Flat peach and red apple then make way for orange marmalade seasoned with spearmint. The marine notes, although discreet, offer great minerality.
Overall : with good length, the spices linger first. Then, after a few seconds, aromas of roasted malt and star anise appear, before blooming a few minutes later in sea spray.
