Colour : Deep old gold.
Nose : Ample, heady. Medicinal (balm), exotic (banana), floral (geranium), fibrous (sugarcane), empyreumatic (rubber tire), and oxidative (sherry vinegar), the aromatic profile is highly complex. As it aerates, the medicinal and oxidative tones gradually take precedence.
Palate : Both firm and delicate. The flavor profile opens with apple jelly, fresh sugarcane juice, delicious marmalade, and orange blossom. This elegant palette then invites us to savor a yogurt before turning empyreumatic (apricot kernel).
Finish : Long, airy. Hovering over a landscape of endless sugarcane fields, the tasting evolves into increasingly candied flavors (ginger, orange, apricot). Over time, cocoa beans and vanilla pods compete in intensity.
