Colour: burnished gold.
Nose: rich, concentrated. With authority, the first nose is like sinking a spade into a field of peat. Just after, malted aromas appear. Allowed to breathe, the increasingly salty aroma palette is covered in intense smoke. Confidently, it releases animal (bacon, bresaola), medicinal (mustard poultice), camphoric and empyreumatic (soot, smoking Havana cigar) notes. In the background, aromas of candied fruit (grape, lemon, pear) underscore the beautiful influence of the Pacherenc du Vic-Bilh.
Palate: powerful, dense. With its flavours of damp straw, the attack precisely and nobly brings a stable to mind. This farmyard character then develops more rustic tones (dandelion, pastures). With impressive substance, the mid-palate then highlights the qualities of an oily and yet very pure spirit. The end of the palate is at once chocolatey, liquoricey and terpenic (lava).
Finish: long, intense. Staying closely in line with the mineral and telluric end of the palate, with time the start of the finish becomes softly herbaceous (cut hay, green barley). At the end of the finish, notes of ginger and curry add a beautiful spicy touch drawn out by a very pleasant milky (crème fraîche, flan) and liquorice (stick) sequence. The rich retro-nasal olfaction is like a chocolate ganache. The empty glass is intensely peaty, smoky and ashy.
