SULLIVANS COVE 25 years Ex-Bourbon Refill #HH0010

Sullivans Cove, established in 1994 with production beginning in 1995, moved to Cambridge near Hobart following its acquisition in 2003. The distillery’s traditional Charentais stills were brought back into operation, supporting a distinctive single malt style that has become known for its finesse, richness and balance.

Part of the Old & Rare collection, this 25-year-old American Oak Refill comes from single cask #HH0010, filled in October 1999 and decanted in May 2025 after 25 years and 6 months of maturation. Patiently matured in a refill American oak cask, the whisky demonstrates the depth and refinement that comes with extended ageing, allowing the spirit and oak to develop in remarkable harmony.

Presented in a bright golden hue, the whisky is rich and creamy, combining layers of candied fruit, honey and spice with tropical fruit, chocolate, nuts and delicate floral notes. Its silken texture and exceptional depth make this a particularly expressive example of mature Sullivans Cove.
