TASTING NOTE
Appearance : lemon yellow.
Nose : fresh, full of energy. On the first nose, cane sugar and extremely elegant fruity (lime), vanilla and herbaceous (sugar cane) notes spread delicately through centre stage. Allowed to breathe, the nose becomes floral (mimosa, broom), spicy (candied ginger), slightly mentholated and medicinal (ointment, clove). Gradually, fresh fruits (pear, pineapple), acacia honey and vetiver and geranium fragrances bring the aroma palette lots of class and complexity.
Palate : clean, clear. With a very sophisticated expression, the attack is rooty (gentian), herbaceous (cypress), lemony and vanilla. On the mid-palate, wonderfully syrupy cane sugar spreads across the palate with infinite softness. Gradually, fruit (passion fruit, pineapple, lychee) brings a remarkably intense exotic dimension to the end of the palate.
Overall : long, rich. The creamy start of the finish (vanilla flan, milk tart) shows wonderful maturity and balance. Honeysuckle, bourbon vanilla, crème brûlée and lime appear together in perfect harmony. The liquorice retro-nasal olfaction returns to notes of acacia honey, blossoming geranium and lime. The empty glass reveals an absolutely delicious cane sugar and aromas of verbena and clove.
