Tasting Notes
Colour : Golden yellow.
Nose : Ample, complex. Subtle notes of toasted bread, dry peat, and twigs highlight the refined character of the first nose. With aeration, the peat becomes more intense, almost animalistic (beef jerky). It also takes on a light veil of smoke. As a climax, exotic fruits (passion fruit, mango) as well as fresh figs provide plenty of substance and verve to the aromatic palette.
Palate : Slender, dynamic. Equally exotic, the attack on the palate is also honeyed (lime blossom) and floral (hyacinth). Meanwhile, the peat delicately integrates itself into every corner of the gustatory palette. Covered with a fine layer of ash, the mid-palate is deeply rooted (ginseng, gentian), highlighting an extremely saline and refreshing minerality.
Finish : Long, balanced. At the start of the finish, peat with chocolate, vanilla, and spicy (saffron) accents takes center stage. Then, slowly, tangy flavors of ripe fruits (mirabelle plum, greengage plum, Williams pear) spread over the taste buds. Intensely indulgent, the retro-olfaction invites us to savor a delicious plain pound cake. The empty glass precisely restores fragrances of Havana, field flowers (daisy, buttercup), and black licorice.
