Colour :Topaz
Nose : Rich, well-developed. The absolutely magnificent first nose is flooded with flavours of warm sugar cane, ripe banana, white florals (iris, lily), salted butter caramel and bourbon vanilla. Like a great Quarts de Chaume sweet wine, the aroma palette becomes honeyed (acacia), jammy (apricot, quince) and very finely empyreumatic (beeswax, a splash of balsamic vinegar). Outstanding.
Palate : Full-bodied and creamy. On the attack, the warm sugar found on the nose pours across the palate. Gradually, flavours of toffee, fresh walnut and ginger are released. The exotic (pineapple, persimmon), vegetal (sugar cane), gently spicy (cinnamon) and praline mid-palate reveals impressive length. The medicinal end of the palate (ointment, mustard poultice) highlights the flavour palette’s strong personality.
Finish : Long, heady. At the start of the finish, notes of molasses, crème brûlée and tar underscore the increased power and move to more and more empyreumatic registers. At the end of the finish, this development is confirmed by flavours of rum baba and flambéed banana. The slightly tannic retro-nasal olfaction wavers between fibrous wood from the sugar cane and more toasted notes from the oak. The rich empty glass is exotic (pineapple, banana), camphoric, ashy and slightly rubbery.
