For this third edition of the Islay Selection, La Maison du Whisky has specially selected two small batches from the Kilchoman farm distillery. These two whiskies are infused with Portuguese influence, one from aging in STR wine casks and the other from port casks. The STR cask (Shave, Toast, Re-charred) is a cask that, after containing red wine, is sanded, toasted, and re-charred, imparting to the whisky aging inside the distinct characteristics of fresh virgin oak and the fruity notes of first-fill red wine. The first small batch is a blend of bourbon (75%), Portuguese STR wine (20%), and oloroso sherry (5%). This results in a whisky that combines savory notes of citrus and iconic peaty smoke from Kilchoman, along with notes of red fruits, spices, and milk chocolate influenced by the ex-Portuguese STR wine casks.
