Founded in 2005, Kilchoman is the first distillery built on the Isle of Islay in over a century. Brought to life by the sea spray from Machir Bay beach, their first single malt was released in September 2009. Modeled after a 19th-century “farm distillery,” Kilchoman prides itself on handcrafting a peated malt with subtle salty accents.

The Fino Sherry Cask Matured edition has been aged for a minimum of five years in 20 Fino sherry casks previously used by the Bodega Jose y Miguel Martin. Maturation in these ex-Fino casks has imparted the whisky with mineral and woody (oak) notes, alongside hints of maple syrup, which blend beautifully with Kilchoman’s natural citrus sweetness and maritime peated smoke.

Following the success of the previous Fino Sherry Matured edition in 2020—Kilchoman’s first worldwide release of this cask style—the journey with Fino has continued over the years. Overseen by Anthony, the 2023 limited edition Fino Sherry Cask Matured is the distillery’s second official Fino edition.

Anthony and Robin hand-selected 20 Fino Sherry butts, with spirit distilled in 2018. Fino offers a completely different maturation style, not often seen at the distillery, which typically focuses on Oloroso sherry casks for their Sanaig and Loch Gorm expressions. As always, the sherry casks were sourced from Bodega Jose y Miguel Martin (Spain) for their impeccable quality.

Each cask chosen for the Fino Cask Matured edition was selected for its unique qualities. The combination of 20 such casks, aged for a minimum of five years, has developed a dry salinity balanced by fresh green fruit influences and Kilchoman’s signature delicate, elongated Islay peat smoke.
