Colour: deep orangey copper.

Nose: rich, silky. The beautifully rancio first nose reveals fragrances of brandied cherries, wilted rose, candied apricot and marmalade. Allowed to breathe, the aroma palette becomes exotic (mango, guava, persimmon), spicy (ginger) and honeyed (lime blossom, heather). Very subtle notes of cane sugar then appear alongside aromas of spice bread, chocolate and tobacco (Havana cigar).

Palate: clean, sharp. The very elegant attack shows apricot and praline. Notes of prune suddenly bring to mind a Bas-Armagnac. The sunny mid-palate is hot (Espelette pepper) and medicinal (tiger balm). The floral end of the palate (lilac, lavender, geranium) is increasingly tertiary (mushroom, dead leaves, moss).

Finish: long, invigorating. At the start of the finish, orange zest and quince jelly softly envelop the taste buds. At the end of the finish, bay leaves appear alongside delicate polish notes (beeswax, oak stave). The retro-nasal olfaction is heady (bougainvillea, reseda) and candied (orange). The empty glass shows liquorice, powdery (cocoa) and slightly camphoric notes.

Description

Produced with a sugar cane variety called “blue” for its purplish-blue highlights, this Karukera has been aged in a Limousin new oak cask and finished for three months in a very old cognac cask that helped mould its roundness. Beaming with maturity, on a chromatic front, this version has a magnificent coppery colour, on an aromatic front an abundantly fruity rancio, and on a flavour front autumnal tertiary notes. Fragrances of old bourbon rise from the empty glass, reflecting its extraordinary complexity.
