Displaying an ester content between 240 and 250 grams per hectoliter of pure alcohol, this version is part of the prestigious Wild Parrot Collection from the Italian trading house Hidden Spirits, founded in 2013.

It falls into the EMB category (formerly known as Bog Estate Mark) of rums produced by the Clarendon distillery, established in 1949.

Particularly dense, like a play rich in twists and turns, its aromatic and flavor profile unfolds in three distinct stages: the first is very fruity, the second is empyreumatic, and the third is mineral. However, beyond these striking differences, they share a common thread of richness and seduction.

Tasting Notes


Colour
: Deep golden yellow.

Nose : Rich, pulpy. Initially, scents of white fruits (pear, peach), vanilla, a pinch of curry, a few cloves, and cane sugar compete in intensity. With aeration, the aromatic profile becomes more citrusy, medicinal, and oily (castor oil).

Palate : Dense, heady. Much more empyreumatic (asphalt, soot) than the nose suggests, the flavor profile evokes the atmosphere of a stable (straw). This remarkable introduction dynamically evolves toward more oxidative notes (pineapple, roasted, fermented fruits) and floral notes (iris, lily).

Finish : Long, fluffy. Mineral and finely tarry, the tasting continues with flavors of agave and emery cloth. Covered by a fine layer of grated ginger, it gradually becomes mentholated, milky, and subtly chocolaty (white). The retro-nasal olfaction, in contrast, is fibrous and rooty (gentian).
