Tasting Notes
Nose : ample, firm. Very slightly animal (bacon, smoked lard), it has a lot of depth. A thin layer of soot accentuates this feeling of deep maturity. Some will detect notes of wax, wild flowers, and slightly moist earth. Over time, spices give it a lot of energy.
Palate : straight, tense. It is immediately fruity (yellow melon, apple, quince) before evolving to a more herbal and vegetal register (tobacco, white mint). Upon aeration, the end of the palate becomes extremely exotic (banana, pineapple) and spicy (cinnamon, clove).
Finish : long. Like the palate, it has a remarkable expressive power. The spices become stronger and the fruit becomes candied. On their side, the flowers, especially the iris, turn into concrete. The retro-olfaction is marked by toffee and dry nuts. The empty glass returns to the animal notes of the first nose.
