Tasting Notes
Nose : Rich, powerful. Delicately smoked bacon forms the backbone of the first nose. This somewhat animalistic character is truly representative of the Hanyu style. Old roses, dried apricots, heather honey, and ginger give it immense class and rigor. The nose is simply beautiful. Deep, it constantly gains in complexity and firmness.
Palate : Straight, uncompromising. Its velvety tannins take possession of the palate. They open up to fully express their floral (violet, lavender) and mineral (slate, manganese) instincts. The animal notes from the nose give way to black fruits (blackberry, cherry) and iris concrete. Then, its magnificent woody character disintegrates into a fine apricot and honeyed dust. Spices (cardamom, clove, nutmeg) gradually integrate into the taste profile in a very harmonious way over time.
Finish : Long, indulgent. The fruity, floral, spicy, and woody flavors are so concentrated that they become almost solid. Fruit pastes ranging from green tomato to passion fruit or mango evoke the world of fine confectionery. The retro olfaction is remarkably supple yet firm. Like the nose, the empty glass is animalistic, herbaceous, and spicy (ginger, nutmeg).
