Description
Colour: bright gold.
Nose: refined, elegant. On the first nose, smoke and cut hay, candied lemon and vanilla all appear together in complete harmony. Allowed to breathe, the smokes acridity pierces the surface of the aroma palette. Gradually, mustard seed, musk and new candied fruits (Mirabelle plum, pear) accompany a rich, oily peat with an incredibly delicate expression. Later, peat definitively gains the upper hand.
Palate: rich, taut. On the attack, an ashy, mentholated, milky, lush and lemony peat takes centre stage, hollowing out a deep groove in search of sea spray, salt and seaweed. On the mid-palate, almond milk and lemon juice refresh the palate. The superbly serene end of the palate wavers between hydrocarbon (fuel), acacia honey, liquorice and fennel.
Finish: long, well-balanced. At the start of the finish, the peat is nourished by empyreumatic notes (macadamia, sleet, petrol) and yet remains supremely elegant. Gentian, bay leaf and sage flavours highlight the vegetal development. The very green and slightly aniseedy retro-nasal olfaction is an ode to malted barley and green malt. Outstanding! At the same time, exotic fruits (pineapple, kaffir lime) release a sweet and tangy juice. A block of drying peat rises from the empty glass as the sun reaches its zenith.
