Heir to a family that has produced sake and shochu since 1625, Ichiro Akuto realized his dream in 2007 by founding a whisky distillery in the village where he was born: Chichibu.

Equipped with eight 3,000-liter washbacks made of Japanese oak (mizunara) and two 2,000-liter pot stills, the distillery began production in 2008.

Made from the Concerto barley variety, this heavily peated version is both rich and complex, asserting a very original personality.

Tasting Notes


Colour
: Deep gold.

Nose : Ample and deep. Peaty, oily, spicy (clove, curry), and camphor-like, the initial nose makes a strong impression. Then, notes of bourbon vanilla, roasted pineapple, tobacco, and heady flowers (iris, lily) confer great smoothness to the aromatic palette.

Palate : Dynamic and creamy. Indulgent (vanilla flan), the palate attack is pleasantly saline. Blocks of peat then pour over the taste buds. At times reminiscent of Jamaican rum, the flavor profile becomes increasingly oxidative.

Finish : Long and intense. Saturated with peaty and smoky notes, the beginning of the finish is balsamic (cough drop) and indulgent (toasted bread, flambéed banana). The aftertaste is rooty (gentian) and is chocolatey, fruity (pear), and infused (black tea).
