TASTING NOTE
Appearance : bright gold.
Nose : refined, balanced. The very rich first nose (brioche, raisin cake) after develops a more medicinal (ointment) and herbaceous (cut hay) register. Allowed to breathe, lime blossom honey, heady florals (mimosa, broom), praline and dried walnut highlight the Oloroso cask’s influence. Gradually, noble spices (cardamom, cinnamon, nutmeg) and vanilla fill the air and bring the aroma palette lots of vitality.
Palate : fine, elegant. The beautifully herbaceous attack (cut hay) is also characterized by notes of beeswax and exotic fruits (pineapple, kaffir lime). The milky mid-palate (coconut, almond) allows a full expression of many different aromatic plants (sage, verbena, camomile). Gradually, lavender honey and cocoa bean gently envelop the taste buds. The end of the palate is spicy (ginger, pepper), deeply malty (porridge) and unctuous (toffee).
Overall : long, serene. At the start of the finish, fresh fruits (pear, white peach) pair perfectly with tertiary (moss, chestnut) and heady (iris, lily) flavours. The very end of the finish reveals vanilla and praline. On the retro-nasal olfaction, malted barley returns to centre-stage, while lime blossom honey, citrus fruit zest (mandarin) and roasted notes (coffee) gradually gain the upper hand. The empty glass is delicately chocolatey and fruity (Mirabelle plum, quince).
