Colour : Bright gold
Nose : Fine, balanced. Very indulgent (brioche, raisin cake), the initial nose then evolves towards a more medicinal (balm) and herbaceous (cut hay) register. Upon aeration, linden honey, heady flowers (mimosa, broom), praline, and dried nuts highlight the influence of Oloroso sherry. Gradually, noble spices (cardamom, cinnamon, nutmeg) and vanilla scents perfume the air, providing vitality to the aromatic palette.
Palate : Elegant, delicate. Beautifully herbaceous (cut hay), the palate is also marked by notes of beeswax and exotic fruits (pineapple, kaffir lime). Lactic (coconut, almond), the mid-palate fully expresses numerous aromatic herbs (sage, verbena, chamomile). Lavender honey and cocoa beans gently envelop the taste buds. The back of the palate is spicy (ginger, pepper), deeply malty (porridge), and creamy (toffee).
Finish : Long, serene. At the beginning of the finish, fresh fruits (pear, white peach) harmonize perfectly with tertiary (moss, chestnut) and heady (orris, lily) flavors. The very end of the palate combines vanilla and praline. In retro-olfaction, malted barley returns to the forefront as linden honey, citrus zest (mandarin), and hints of roasting (coffee) gradually take over. The empty glass reveals subtle chocolate and fruity aromas (mirabelle plum, quince).
