Part of the Single Farm Origin range, this second batch from Sheestown’s first crop distillation was grown on undulated, well-drained lowland soil, predominantly derived from limestone, by Phil O’Brien, on a high quality terroir that sits just outside the historic town of Kilkenny.
The Sheestown 1.2 is a blend of first-fill bourbon casks (33%), American new oak casks (19%), French oak casks (25%) and casks that previously contained a fortified wine (23%).
One of 35 different farms distilled in 2016, the Sheestown 1.2 was bottled at 50% ABV without chill-filtration or added colouring.
