At the end of the year, Mark Reynier and his team return with a 2nd edition of their Organic Gaia single malt, produced from organically grown barley. Gaia, goddess of yesteryear, personification of Mother Nature herself, is a logical reference for this whiskey which explores the contribution of barley in its greatest purity. This new version was made from barley harvested in 2016 from 6 Irish farms. John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris are the men who responded to Waterford’s challenge to produce Ireland’s first organic barley dedicated to malting, despite its firmer yields.

This edition is the result of a blend of first-fill bourbon barrels (39%), American new oak barrels (17%), French oak barrels (19%) and barrels that contained a natural sweet wine (25 %). Compared to the previous edition, the influence of French oak and “VDN” stamped barrels is more significant. The whiskey is warm, with marked notes of malted barley, enhanced by a gourmet touch (chocolate, brown sugar, fig biscuit, peanuts), nice notes of fresh or zesty fruits (orange, grapefruit, cherry) and a spicy finish of great refinement.
