SULLIVANS COVE American Oak ex-Bourbon Single Cask (TD0351)

Sullivans Cove is one of Australia’s most celebrated whisky producers, with its distillery established in 1994 before production began in 1995. Following its acquisition in 2003, the distillery moved to Cambridge near Hobart, where its traditional Charentais stills were brought back into operation. Today, Sullivans Cove produces a highly regarded single malt known for its finesse, balance and distinctive Tasmanian character.

The American Oak ex-Bourbon Single Cask is Sullivans Cove’s most awarded expression and among the most awarded Australian whiskies ever produced. Matured in a single 200-litre, first-fill American oak bourbon cask, this release showcases the distillery’s signature style, combining a rich malt backbone with vanilla, caramel, stone fruit, floral notes and powerful oak.

Cask TD0165 was distilled in November 2006 and decanted in January 2020, giving it 13 years and 2 months of maturation in a single cask. Bottled at 47.5% ABV, this individual cask offers a wonderfully expressive profile, with creamy tropical fruit, rich bakery notes, vanilla, maple syrup and a vibrant, subtly savoury finish.
