Founded in 1785, it has maintained the same traditional production of pure cane juice rum throughout its history, preserving the tradition of crushing the cane using a hydraulic mill, spontaneous fermentation without the addition of yeast, and distillation in a pot still. Rivers is an intense rum characterized by citrus and esters.
