Tasting Notes
Colour: Copper-orange.
Nose : Ample, refined. Notes of apricot rancio, oxidative (cherry eau-de-vie), and tertiary (toasted walnut, precious wood, varnish) highlight the influence of the sherry cask brilliantly. With aeration, heady perfumes (orris concrete, sandalwood) and caramel aromas deeply permeate the aromatic palette.
Palate : Clear, lively. Chocolatey, the mouthfeel reveals a rooty (ginger), medicinal (cough drop) and slightly camphoraceous attack. Vegetal (sugar cane) and roasted, the mid-palate evolves towards notes of sugarcane and toffee.
Finish : Long, velvety. Fine fruit tannins (raisin, dried fig) gently envelop the palate. Oriental (curry, turmeric), the aftertaste becomes more powdery (cocoa). In retro-olfaction, saffron and nutmeg express the nobility of the gustatory palette.
