Our sugar cane is raised on the soil of the North Caribbean whose soils are little evolved, on volcanic pumice from Mount Pelee, with a sandy clay texture. These plots are characterized by their strong sunshine and low rainfall with a very high daily thermal amplitude during Lent (harvest period).
Distilled during the 2005 campaign, aged on November 30, 2005, this rum will be unloaded from a single 300- litre French oak barrel on October 28, 2021.
Seductive golden bronze color. Panache of the nose weathered by time, reminiscent of warm and spicy notes rallied by a darting fruitiness. Soft attack of a velvet mouth, then nostalgic and sunny journey from the fields of canes swollen with sugar to the cellars, towards long spicy notes.
