Renowned for its rich and concentrated spirit, MACALLAN places great emphasis on every stage of production, from the selection of barley varieties such as Golden Promise and Optic to its long fermentation and slow distillation. Only a carefully selected portion of the distillate is retained for maturation, with a strong focus on exceptional-quality Sherry casks. The distillery has also worked closely with bodegas in Andalucía to secure casks suited to its distinctive maturation style.
Part of Signatory Vintage’s Symington’s Choice series, this exceptional single cask was distilled on 24 September 1997 and matured in an Oloroso Sherry cask for 25 years. Bottled on 9 February 2023 at its natural strength of 51.5% ABV, it is non-chill filtered and contains no added colouring. Limited to just 660 bottles, this release delivers a deeply sherried profile centred on dried fruits, cocoa and rich roasted notes.

Palate: Velvety and profound, with raisins, figs and dates complemented by a subtle nutty bitterness.
Finish: Long and persistent, with lingering dried fruit and cocoa followed by dark tobacco and roasted coffee.
