TASTING NOTES
Colour: golden yellow.
Nose: fine, fresh. The very fruity first nose (banana, Mirabelle plum, apple) is also deliciously honeyed. Allowed to breathe, the aroma palette reveals a stunning vegetal sequence (cut hay, barley field, ripe wheat). Increasingly spicy and hot (Cayenne pepper, ginger, clove), it gradually becomes heady (broom, mimosa).
Palate: clean, lively. First, flavours of pressed lemons invigorate the attack. These are then softened by very smooth vanilla and milky (coconut, almond) notes. On the mid-palate, aromatic plants (sage, verbena, rosemary) appear alongside liquorice and spicy (ginger, cinnamon) tones. The wonderfully malty end of the palate is also slightly tannic.
Overall: long, well-balanced. Drawing out the end of the palate, the start of the finish is very pleasantly salty. Candied fruits (lemon, pear) are also present. At once vanilla, praline and herbaceous (moss, lichen), the end of the finish is gently lengthened by amazingly fresh honeyed (acacia) and floral (lime blossom, lily of the valley, lilac) registers. The exotic retro-nasal olfaction (pineapple, banana) invites us to start the tasting all over again. Staying true to the nose and palate, the empty glass is malty, spicy (cinnamon), mentholated and lemony.
