TASTING NOTE
Appearance : brown burnished gold
Nose : elegant, distinguished. The truly outstanding first nose reveals perfect balance between the sherrys inherent notes of rancio (beeswax, apricot, toffee) and the delicate oily, spicy (nutmeg, clove), salty and vegetal (pipe tobacco) peat. Allowed to breathe, candied citrus fruits (orange, kumquat) and a handful of black fruits (blueberry, blackcurrant) appear alongside notes of toast and camphor. The peats phenolic, animal and medicinal character gradually takes over.
Palate : lively, sharp. The attack is delicately yet intensely peaty, while also honeyed (lime blossom, heather), creamy (almond milk) and praline (sherry). The mid-palate is then characterized by notes of salted butter caramel, pecan, coffee and brewed black tea. The end of the palate is medicinal (iodine tincture), mineral (slate) and rustic (dandelion).
Overall : long, noble. A real sweet treat, the start of the finish is like sucking on a cough-sweet. Built around an incredible malty bitterness, it lingers on flavours of spice bread, flowering courgette and peppermint. On the retro-nasal olfaction, fresh walnut and black olive bring lots of softness to the very end of the palate. The heart of the empty glass is like a premium Havana cigar, while the outer edges are filled with malty, earthy and chocolate scents.
