Tasting Notes
Colour : Deep old gold.
Nose : Refined and pure. Initially, very elegant smoky scents rise from the glass. The aromatic palette then takes on mineral (slate, chalk), fruity (baked apple), tarry, and freshly herbaceous (grass) tones. It becomes saline, delicately floral (white rose), and indulgent (shortbread).
Palate : Unfolding and complex. In continuity with the nose, the gustatory palette is distinctly saline at first. Evocative, it then reveals flavors of green tea, thyme, citrus (orange), and smoked mackerel. As a delicious prelude to savoring caramelized apples, it evolves toward an ever more serene character.
Finish : Both rich and subtle. Enhanced by honeyed and roasted notes (coffee) alongside the presence of dark fruits (blueberry), the flavor profile is remarkably dense. Gradually, delicate smoky, ashy, and maritime notes (salmon) embellish an atmosphere that is pleasantly mineral and herbaceous (hay).
