Tasting Notes
Colour : Deep burnished gold.
Nose : Fresh, ethereal. Exotic (plantain banana, persimmon, guava), roasted (coffee) and floral (hyacinth, honeysuckle), the first nose also reveals notes of candied citrus fruits (orange, kumquat, mandarin). Allowed to breathe, warm cane sugar spreads across the surface of the aroma palette. Increasingly hot (Espelette pepper), it is also deliciously vanilla and nobly woody (beeswax, cedar).
Palate : Lively yet creamy. With great presence, the attack reveals amazingly pure flavours of sugar cane. On the mid-palate, cocoa powder and grated ginger softly coat the taste buds. Then, with time, flavours of dried flowers (carnation, geranium, iris) draw out the end of the palate up until the finish.
Finish : Long, heady. Staying united with the end of the palate, the start of the finish is abundantly fruity (Mirabelle plum, pear, walnut, date). The slightly tannic end of the finish develops a more empyreumatic register (hot tar, black liquorice, pipe tobacco). Staying close to the sugar cane, the retro-nasal olfaction is subtly woody. The empty glass is then chocolatey and infused (coffee, red tea).
