Tasting Notes
Nose : Fruity (Mirabelle, damson) and cereal (oat flake, orgeat), a hint of anise and cinnamon appears first delicately, as if sprinkled. Then the fruits make a noticeable return, well accompanied by quince paste. With more aeration, red fruit jelly (raspberry, strawberry) and caramel candy enrich the aromatic palette.
Palate : Pear and prune fruit pastes mark the attack, first warm and spicy (pepper). Followed by herbal notes (dry grass) and the bitterness that often accompanies them. The mouth then takes on a new complexity.
Finish : The fruit fades, the flesh gives way to the skin: that of a freshly peeled Comice pear, with its granular aspect. Spices take hold of the mouth again, but they are softer and accompanied by a slight astringency.
