Description
Colour: deep old gold.
Nose: rich and unctuous. Both floral (mignonette, hyacinth), musky and medicinal (balm), the aromatic profile shows remarkable depth. With aeration, delicate notes of cane honey and sugarcane emerge. Gradually becoming more empyreumatic (rubber), it also reveals touches of spice (white pepper, ginger).
Palate: lively yet full-bodied. Returning assertively to the medicinal notes of the nose, the flavour profile is marked by intense impressions of mustard seed and clove. It then broadens into honeyed and subtly tarry tones (pipe tobacco).
Finish: ample and well-balanced. Brightened by vibrant citrus notes (lemon, grapefruit) and juicy fruit (ripe banana, Reinette apple), it bursts with vitality. Fibrous and liquorice-like, the retro-olfaction transports the senses into the wild atmosphere of an active fermentation room.
