This limited edition Old Tom Gin was crafted in a Victorian dairy located in Battersea, London, paying tribute to Ralph Dodd, an enterprising spirit who founded The London Distillery Company in 1807. The distillation process involves two components: a column still named “Cristina” and a vacuum still called “Little Albion.” This certified organic gin spent several weeks in American oak barrels and is made with juniper berries, bay laurel, angelica, cardamom, lemon, and licorice. With its juniper notes, the first impression on the nose is rich and concentrated. The palate is subtly vanilla and spicy (clove, ginger). The mid-palate is herbaceous (cut hay) and lush (bay laurel, linden). Upon aeration, it extends to ripe (pear, plum) and dried fruits (walnut, almond).
