This single malt, distilled during the summer of 2011, is crafted from a meticulous blend of 27 first-fill bourbon casks sourced from the Clermont Springs distillery in Kentucky, aged for over 12 years at Daftmill Farm.
It is made using Publican barley, harvested on August 28 and 29, 2009, and malted in Alloa during the summer of 2010. Operating as a true farm distillery since 2005, Daftmill is owned and run by the Cuthbert family.
The distillery operates only during the farm’s quieter seasons, namely mid-summer and winter, which means production is sometimes limited to just 100 casks per year.
