Tasting Notes
Colour : Bright gold.
Nose : Rich, powerful. Spicy, salty, and medicinal, the aromatic palette is initially dense and energetic. Upon aeration, earthy and rooty scents flirt with peat. Very quickly, however, it becomes candied (pear, apple, mirabelle plum) and heady (lily, lily of the valley).
Palate : Lively, concentrated. Intensely malty and medicinal (mustard plaster), the flavor profile is also herbaceous (tobacco leaf, cut hay). Aniseed and endowed with a pleasant saline minerality, it then invites us to bite into a firm yet juicy Williams pear.
Finish : Long, full-bodied. Ferment-like (beer wort, flower of beer), the tasting reveals with precision delicious flavors of zucchini flower fritters. Long after, sublime scents of lavender, jasmine, and more mineral notes (slate) escape from the empty glass.
