Chichibu Distillery — established in 2007/2008 by visionary Ichiro Akuto — has rapidly become a benchmark for modern Japanese whisky. Built from the ground up to challenge convention, Chichibu was among the first Japanese distilleries to embrace local barley, indigenous yeasts and even mizunara oak vats for fermentation, long before the term “100% Japanese whisky” became part of the industry lexicon. In 2019, a second distillery — Chichibu #2 — was inaugurated to meet growing global demand, producing roughly 260,000 litres of pure alcohol per year while preserving the original site (renamed Chichibu #1) as the heart of experimental and artisanal production. Across both facilities, small stills and meticulous processes yield whiskies of surprising depth, clarity and vibrant aromatic complexity.
