Its balanced distillate provides an excellent foundation for cask maturation, allowing additional layers of flavour to develop without overwhelming its signature Islay identity.
This 9-year-old Caol Ila, distilled in 2017 and matured in first-fill Rivesaltes casks, brings together Islay peat and the rich, oxidative character of Roussillon’s fortified wine. Bottled at 46% ABV as part of Signatory Vintage’s The Un-Chillfiltered series, this small-batch expression offers a vibrant yet approachable style, balancing fine smoke and sea salt with dried fruits, honey and gentle sweetness.
