In the Apennines Mountains, between Tuscany and Emilia Romagna region, at 3000 ft above sea level, surrounded by secular plants, rises the Abbey built in 1028 by Saint John Gualberto, the founder of Benedictines Congregation of Vallombrosa.
The abbey became famous for the production of honey, chocolate, various herb products for body and face treatments, liquors and bitters distilled from herbs, and mainly for the production of dry Gin of Vallombrosa. It is made just with juniper berries grown on the hills between Sansepolcro and Pieve Santo Stefano, in the Arezzo province, discovered during the years when the monks were performing forest preservation for the Government.
The highly aromatic concentration found in this plant allows the use in a one variety distillation with great results, to the point that same Anglo-Saxon experts selected some samples to produce gin Estates products with the “cold compound” technique.
