The Special Cask label is reserved for the rarest Sullivans Cove whiskies. These are unique whiskies that do not belong to the usual French or American oak styles. These whiskies must also receive exceptional ratings from the internal tasting committee and represent the pinnacle of what Sullivans Cove can achieve. Each edition of Special Cask is different, and only one or two casks are released each year, with a maximum of a few hundred bottles. It can be wine casks, new or re-used oak, or anything else, but if it carries a green label, you can be sure you’re getting something unique and incredibly special. The Sullivans Cove Special Cask #7 – American Oak ex-Apera cask TD0214 was distilled in November 2011 and decanted in October 2019. It matured for eleven years and eleven months in a single 300-liter American oak cask previously filled with Apera (Australian fortified wine in the style of sherry). Bottled at 45.8% alcohol, this cask produced only 281 bottles.
