The French Oak Second-Fill expression highlights the remarkable partnership between Sullivans Cove’s spirit and carefully selected ex-Tawny French oak casks. Having previously matured an earlier batch of Sullivans Cove single malt, these casks impart richness and elegance while allowing the distillery’s character to shine through. Intense yet subtle, this whisky balances notes of brown sugar, vanilla and cocoa with layers of fruit, confectionery sweetness and creamy oak, creating a distinctive and memorable dram.

Tasting Notes
Nose: Rich brown sugar, molasses, dark rum, baking spices, cherry tart and cocoa.
Palate: Light, syrupy and delicate, with vanilla cream, bubble gum, watermelon and cotton candy sweetness.
Finish: Long and creamy, carrying notes of strawberry, pink doughnut, apple turnover and coconut icing.
